Stella's Irish Roots

Serves 6-8
Ingredients:
2 large carrots cut into one-half inch rounds
3 large celery stalks cut into one-half inch lengths
2 large parsnips cut into one-half inch rounds
2 large or 4 medium yellow beets cut into one-half inch pieces
1 tablespoon Herb Essential Blend
3 tablespoons olive oil
1/2 teaspoon Kosher salt + 1/2 teaspoon Sea Salt Essential Blend to finish
2 tablespoons sherry vinegar
1-2 tablespoons Lemon Honey Jelly
Instructions:
Prepare vegetables and put into a bowl.
Add the Herb Essential Blend, olive oil, and 1/2 teaspoon of Kosher salt and mix together.
Place on a cookie sheet so root vegetables do not overlap and roast at 400-degrees for 15-20 minutes or until a fork goes through them easily. Remove from oven and put into a serving bowl.
Add Sherry vinegar and Lemon Honey Jelly and toss. Finish with Sea Salt Essential Blend.
Serve in a bowl or on a platter.
