Winter Italian Sausage Soup

Ingredients:
1 pound Italian sausage (sweet or hot, depending on your preference)
1/2 yellow onion, diced
3 cloves of garlic, minced
2 cups fresh baby spinach, roughly chopped
1 cup cavatappi pasta (or preferred pasta)
4 cups chicken broth
1 cup heavy cream
1 can (14.5) ounces diced tomatoes, drained
1 to 2 tablespoons olive oil
1/2 cup grated Parmesan cheese
Fresh parsley, chopped, for garnish

Instructions:
In a large pot, heat the oil over medium heat. Add the sausage and cook until browned. Break into small pieces as it cooks. Remove and set aside.
In the same pot, add the diced onion and garlic. Sauté for 2 to 3 minutes until softened and fragrant.
Pour in the chicken broth and bring to a simmer. Stir in the diced tomatoes and the cooked sausage. Add the pasta and cook following the pasta package instructions.
Once the pasta is cooked, add the heavy cream, Parmesan cheese, and fresh spinach. Let simmer for 2 to 3 minutes or until the spinach is wilted and the soup is creamy. Season with salt and pepper to taste.
Serve with fresh Parmesan cheese and fresh parsley.
