Vegan Tomato Minestra & Next Level Grilled Cheese

 

Vegan Tomato Minestra Ingredients:

1 quart fresh tomato sauce

1 can coconut milk (14 ounces)

2 cups vegetable stock

3 tablespoons tomato paste

2 tablespoons Lemon Garlic Sea Salt

Instructions:

Add all ingredients to a saucepan and cook at medium/high heat until boiling.
Reduce the heat and allow to simmer until reduced to the thickness you like, about 30 minutes.

Serves 4 to 6. 

 

  

Next Level Grilled Cheese Ingredients:

Rustic Loaf of Bread

1/4 cup mayonnaise

1 teaspoon Lemon Garlic Sea Salt

8 slices Havarti cheese (or other favorite cheese)

Instructions:

Mix the mayonnaise and Lemon Garlic Sea Salt in a bowl.

Cut the bread into 8 slices. Spread one side of each slice with the Lemon Garlic mayonnaise mixture liberally.

On medium heat, place one piece of bread in a frying pan. The piece with the mayonnaise mixture should be face down so that it browns nicely. Add two slices of cheese, and put another piece of bread on top with mayonnaise mixture side up. 

Allow the bottom side to get crispy golden brown, then turn bread over and cook the other side.

Once the cheese is melted, enjoy an incredible treat. Dip it in the Vegan Tomato Minestra for a perfect bite
