Stella's Summer Peach Focaccia

Ingredients:
Focaccia (see our focaccia recipe on this website to make the focaccia)
4 ounces prosciutto
3 to 4 peaches
4 ounces goat cheese
Olive oil (for drizzling)
2 teaspoons of Stella's Table Herb Essential Blend
Balsamic glaze (for drizzling)
Instructions:
We made a full batch of focaccia and then cut the dough in half and placed in two 8x12 baking dishes. Bake and let cool.
Once the focaccia is cooked, prep the peaches for grilling. Slice the peaches into 1/4 to 1/2" slices. Drizzle olive oil over a very hot grill pan and then add the peaches. Grill until seared on one side. Remove from the grill and set aside.
Spread the goat cheese onto the focaccia. Then place the prosciutto strips across the focaccia/goat cheese. Place the peaches across the prosciutto, drizzle with balsamic glaze and sprinkle the Herb Essential Blend across the top.
Slice and enjoy!
To achieve a more herb-infused taste, you can toss the peaches in olive oil and the Herb Essential Blend before grilling. You can also add a little salt to the peaches if they are not very ripe. This will help bring out some of their sweetness.
