OMG Chickpean Salad!

We feel blessed that many vegans and vegetarians love our salts.  Here’s one of our favorites from out test kitchen that will be sure to please.  This really is an AMAZING VEGAN recipe that mimics the flavor and texture of chicken salad.  Really! We can’t get enough of it!
  1 cup black lentils
  2 cans (16oz) of Garbanzo Beans (Chickpeas), drained and rinsed
  1 can hearts of palm, salad cut, drained and chopped
 16 ounces (about 2 cups) finely chopped celery
  ¼ cup red onion, finely chopped
  ¼ cup chopped parsley
  ¾ cup Best Foods Vegan Mayonnaise (It tastes the same!  Really!)
  4 cups Vegetarian No-Chicken Broth (Imagine Brand)
  1.25 tbsp of Stella’s Table Lemon Garlic Sea Salt
  1 tsp black pepper
Ahead of time, add the broth to a sauce pan, bring to a boil and add the black lentils.  Reduced to a simmer and cook until just soft (about 20 minutes). Set aside to completely cool.  In a large bowl, combine all the other chickpeas, hearts of palm, red onion, parsley, pepper and Stella’s Table Sea Salt.   Once the lentils are cool, add to the other ingredients and mix well with Best Foods Vegan Mayo. 
Serve over mixed greens or toast for a great delicious and healthy sandwich!
