OMG Chickpea Salad!

Ingredients:
1 cup black lentils
2 16-ounce cans of garbanzo beans (chickpeas), drained and rinsed
1 can hearts of palm (salad cut), drained and chopped
2 cups finely chopped celery
1/4 cup red onion, finely chopped
1/4 cup chopped parsley
3/4 cup mayonnaise (you can use Best Foods vegan if you prefer)
4 cups chicken broth (here too you can use vegetarian broth)
1.25 tablespoons of Stella's Table Lemon Garlic Sea Salt
1 teaspoon Stella's Table Essential Blend Pepper
Instructions:
Ahead of time, add the broth to a sauce pan, bring to a boil and add the black lentils. Reduce to a simmer and cook until just soft, about 20 minutes. Set aside to completely cool.
In a large bowl, combine all the other chickpeas, hearts of palm, red onion, parsley, Lemon Garlic Sea Salt and Essential Pepper.
Once the lentils are cool, add to the other ingredients and mix together . Add in the mayonnaise and mix well.
Serve over mixed greens or toast for a great delicious and healthy sandwich!
