Lemon Garlic Orzo with Roasted Broccoli


2 pounds broccoli florets, sliced into wedges.

4 tablespoons olive oil, divided

1 tablespoon minced garlic

1/2 teaspoon salt

1 teaspoon sugar

2 1/2 cups cooked orzo

1/4 cup shredded parmesan cheese

Stella's Table Essential Pepper Blend for seasoning

Dressing ingredients:

3/4 cup lemon juice

1 cup extra virgin olive oil

1 bunch basil, chopped

2 teaspoons Stella's Table Lemon Garlic Sea Salt


Move the oven rack to the lowest position and place a large baking sheet in the oven during the pre-heating.  Pre-heat the oven to 500 degrees.

In a large bowl, add the broccoli wedges, the minced garlic, 3 tablespoons of olive oil, salt, sugar and toss.  Season with Stella's Table Essential Pepper. 

Remove the baking sheet from the oven and add the broccoli mixture to the hot pan.  Ensure the broccoli is in a single layer.  Return to the oven and cook until browned, about 9 to 10 minutes.  At this point, turn the broccoli so the bottom side browns and begins to char, about 1 to 2 more minutes.  Once done, remove from the oven and set aside. 

Cook the orzo per package instructions.  Make sure to salt the water - it should taste like the sea! 

In a large bowl, mix the lemon juice, olive oil, chopped basil and Stella's Table Lemon Garlic Sea Salt.  Whisk to combine. 

Add 1/3 of the cooked orzo to the dressing mixture and let sit for 5 minutes.  Add the remaining orzo and the broccoli and toss.  

Sprinkle the shredded parmesan cheese on top of the dish.  Serve hot or cold.
