Insalata di Riso

Serves 8-10

Ingredients

2 cups white rice cooked
8 oz. Italian olive salad (olives, carrots, peas)
4 oz. mini pickled sweet peppers
6 oz. rosemary ham, mortadella, salame cubed small
7 oz. artichoke hearts under vinegar chopped
⅛ cup pine nuts
4 oz. fontina cheese cubed small
1 cup olive oil
2 Tbsp fresh Italian parsley
⅛ tsp fresh thyme
½ tsp fresh oregano
1 tsp Pesto Sea Salt
⅛-¼ tsp pepper
½ lemon juiced
1 tsp kosher salt

Instructions

Make your rice and let it cool.  Prepare (chop) all of your ingredients. Put all together and toss.
