Insalata di Riso
Serves 8-10
Ingredients:
2 cups white rice cooked
8 ounces Italian olive salad (olives, carrots, peas)
4 ounces mini pickled sweet peppers
6 ounces rosemary ham, mortadella, and salami, cut into small cubes
7 ounces artichoke hearts under vinegar chopped
⅛ cup pine nuts
4 ounces fontina cheese, cut into small cubes
1 cup olive oil
2 tablespoons fresh Italian parsley
1/2 teaspoon thyme
1/8 teaspoon oregano
1 teaspoon Stella's Table Pesto Sea Salt
⅛-¼ teaspoon Stella's Table Pepper Essential Blend
½ lemon juiced
1 teaspoon kosher salt
Instructions:
Make your rice and let it cool.
Chop your fontina cheese, ham, mortadella, and salami and add to your bowl of rice.
Add in the remaining ingredients and stir until all combined.
Serve.
