Holiday Sweet Potatoes
Ingredients:
3 medium sweet potatoes, peeled and cut into large cubes
2 tbsp olive oil
2 tbsp Apricot Peach Spice Jam
2 tbsp maple syrup
1/2 tsp Sea Salt Essential Blend
1/4 tsp Pepper Essential Blend
1/4-1/2 cup feta cheese, crumbled
1/4 cup pecans, roughly chopped
2 tbsp fresh parsley, chopped
Diretions:
Preheat oven to 400 degrees and line a baking sheet with parchment paper.In a large bowl, toss the sweet potatoes with olive oil, maple syrup, apricot peach spice jam, salt and pepper until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast for 25-30 minutes, flipping the potatoes half way through, until tender and caramelized on the edges.
Remove and transfer to a serving dish. Top with feta, parsley and chopped pecans.
