Essential Mashed Potatoes
Pair with our Meatloaf Stella's Style recipe.
Ingredients:
3 pounds Yukon gold potatoes
½ cup extra virgin olive oil
1 cup chicken stock (can also use vegetable stock)
1 tablespoon Herb Essential Blend
1 to 2 teaspoons Sea Salt Essential Blend
1 teaspoon Pepper Essential Blend
Instructions:
Peel and cut the potatoes into quarters (or if large, into 6 pieces). Place in cold, salted water and cover just to the top of the potatoes. Bring to a boil until fork tender, about 15 minutes.
Drain the potatoes and put into a large bowl. Add the remaining ingredients and using a mixer, beat until creamy.
For best results, keep warm in a 200-degree oven for 1 to 2 hours to allow the seasonings to infuse fully.
These potatoes are even better the next day!
