Di Fico Spinach Salad

Di Fico Spinach Salad

Serve 3-4

Ingredients:

12 ounces shredded chicken (we used a Rotisserie chicken from the store)

4 ounces Fresh Spinach

1 tablespoon Fennel, finely shaved

1 tablespoon Shallot, finely shaved

1/2 cup of your favorite seasoned nuts (this recipe is made with our Smoked Spice Sea Salt nuts)

6-8 fresh figs cut into quarters

For the Dressing:

3 tablespoons Stella's Table Fig Jam

1 tablespoon stone ground mustard

1 ounce red wine vinegar

2 ounces olive oil

1/8 - 1/4 teaspoon Stella's Table Essential Pepper

Instructions:

Make the vinaigrette by mixing all of the ingredients together, whisking and set aside.

Put the shredded chicken in a bowl and pour the vinaigrette into it and mix thoroughly (we love doing it this way so your chicken has the flavor of the dressing as well)

Add all the other ingredients and mix well. Add fresh figs on top (optional) and serve.
