Di Fico Spinach Salad


Simple, Seasonal and Delicious. We used a rotisserie chicken from Petaluma Market, shredded it up, added some wonderful accompaniments and dressed in in a delectable Fig Jam Vinaigrette.   

Serve 3-4


12 oz. shredded chicken (we used a Rotisserie chicken from the store)

4 oz. Fresh Spinach

1 Tbsp Fennel, finely shaved

1 Tbsp Shallot, finely shaved

1/2 Cup of your favorite seasoned nuts (this recipe is made with our Smoked Spice Sea Salt which we will share soon)

6-8 Fresh Figs cut into quarters

For the Dressing:

3 Tbsp Fig Jam

1 Tbsp Stone Ground Mustard

1 oz. Red Wine Vinegar

2 oz. Olive Oil

1/8 - 1/4 tsp Fresh Ground Pepper to taste


1. Make the vinaigrette by mixing all of the ingredients together, whisking and set aside.

2. Put the shredded chicken in a bowl and pour the vinaigrette into it and mix thoroughly (love doing it this way so your chicken has the flavor of the dressing as well)

3. Add all the other ingredients, mix well, add fresh figs on top (optional) and serve.
