Di Fico Muffins & Cara Mia Bites

Ingredients: 

Package Vanilla Cake Mix - Follow directions (We use Miss Jones Organic Cake Mix Vanilla - 15.87 Ounce). If you use a different vanilla cake mix, follow the directions accordingly.

  • 1/3 Cup Di Fico Fig Jam 

For White Chocolate Ganache:

  • 100 grams white chocolate chips
  • 50 grams heavy whipping cream

For Lemon Honey Ganache:

  • 2:1 white chocolate chips to Di Limone Lemon Honey Jelly (e.g. if you use 2 Tbsp of white chocolate chips, use 1 Tbsp lemon honey jelly)
  • Pinch of Himalayan Sea Salt (optional)

Instructions for Muffins:

  1. Fill pre-formed tulip style parchment baking cups (available on Amazon) 2/3 full.
  2. We like fig jam at the bottom of our muffins so we add a dollop of fig jam to the top of the muffin while raw. This will drop to the bottom while baking.
  3. Bake per directions on mix.
  4. Once out of the oven, let cool for 10 minutes.
  5. Scoop a small hole in the center of the baked muffin (use a small spoon) and add a dollop of fig jam.
  6. Drizzle muffins with White Chocolate Ganache using a spoon in whatever pattern you like. We used a simple back and forth method. (See recipe for Ganache below)

Instructions for White Chocolate Ganache

  • Add white chocolate chips and whipping cream to a microwave safe bowl. Microwave on high for 10-15 seconds. Take our and stir. If it needs more time to melt completely, only do it for another 10 seconds. White chocolate can burn easily. If there are only a couple of chips still unmelted, try to stir them for a minute to melt them all the way.

 Instructions for Bites:

  1. Fill pre-formed Freshware silicone mold Valentine Heart 8-cavity (available on Amazon) 2/3 full.
  2. Bake per directions on mix.
  3. Once out of the oven, let cool for 10 minutes.
  4. Roll in Dark Coconut Palm Sugar (This sugar is dark brown).
  5. Pipe Lemon Honey Ganache into the heart depression of the bite. (See recipe for Ganache below)

Instructions for Lemon Honey Ganache:

  1. Add white chocolate chips and lemon honey jelly to microwave safe bowl.
  2. Microwave on high for 15 seconds andTake our and stir. If it needs more time to melt completely, only do it for another 10 seconds. White chocolate can burn easily. If there are only a couple of chips still unmelted, try to stir them for a minute to melt them all the way.
  3. Put into a Ziplock bag for piping. Spoon ganache to one corner of bag and cut a small corner for piping.
