Big Sesame Stir Fried Chicken

Ingredients:
1 pound boneless, skinless chicken thighs
1 tablespoon toasted sesame oil
2 tablespoons of avocado oil
2 teaspoons of fresh ginger, peeled and grated
3 to 4 garlic cloves, smashed
1 bunch of scallions, cut into 2" lengths
1/4 teaspoon of chili flakes
1/4 cup toasted cashews
1/4 cup rice wine
2 tablespoons dark soy sauce or tamari sauce
2 tablespoons Stella's Table Fig Jam
1 1/2 cups cilantro
White rice to serve with the chicken
Instructions:
Cut the chicken into 2" cubes. Add 2 tablespoons of avocado oil to a frying pan and sauté the garlic, ginger, Chile flakes, and green onions. Once softened, add 2 more tablespoons of avocado oil to the frying pan and then add the chicken and cashews.
Turn down the heat and cook until the chicken is cooked through. Then, add the rice wine, Tamari and the fig jam. Lower the heat and continue to cook until the sauce is slightly thickened.
Remove the heat and add the sesame oil and cilantro.
Add to white rice and serve.
