Apple Cake Bites
Ingredients:
3/4 cup sugar
3/4 cup packed light brown sugar
1/2 cup melted butter
2 eggs, lightly beaten
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1/4 teaspoon Stella's Table Citrus Sea Salt
2 apples, chopped
For the lemon honey icing:
4 ounces package softened cream cheese
1/2 cup powdered sugar
1 1/2 tablespoons Stella's Table Lemon Honey Jelly
1/2 teaspoon vanilla extract
Instructions:
Pre-heat your oven to 350-degrees.
Use either a 9x12 brownie pan or a segmented brownie pan. Spray with cooking oil. Set aside.
In a large bowl, mix together the sugars and the butter until creamy. Add the eggs and vanilla.
In a separate bowl, whisk together the flour, baking power, and citrus sea salt. Add into the wet ingredients and stir until just combined.
Fold in the chopped apples. The batter will be thick like cookie dough.
Scoop the batter into your baking pan and bake for 30 minutes or until lightly browned and a toothpick comes out clean. Remove from the oven and cool on a wire rack for 15 minutes and then remove from the pan to cool fully.
For the icing, mix the cream cheese, vanilla, and powdered sugar until creamy. Heat the lemon honey jelly so that it becomes loose and then add to the icing mixture. Stir until fully combined.
Once the bites are fully cooled, add a large dollop of icing to the top of each apple bite and then sprinkle the citrus sea salt on top.
