1/2 cup flour

3 eggs

1/2 cup milk

1/2 teaspoon salt

2 tablespoons of melted butter plus 2 tablespoons for the frying pan. 

1/3 cup heavy whipping cream

1 tablespoon Stella's Table Lemon Honey jelly

Raspberries, powdered sugar and lemon to garnish


1) Using a wire whisk, beat the 3 eggs until blended. 

2) Double sift the flour and salt. 

3) Pour the egg mixture into the flour and whisk until smooth. 

4) Add the milk and whisk until combined. 

5) Slowly add the melted butter and whisk. 

6) Heat an oven-proof frying pan and add the remaining 2 tablespoons of butter.  Once melted, add the pancake batter. 

7) Place in a 450-degree oven for 12 to 15 minutes, or until the pancake is raised and golden brown. 

8) While the pancake is cooking, beat 1/3 cup heavy whipping until stiff peaks are formed.  Fold in 1 tablespoon Stella's Table Lemon Honey jelly. 

8) Once cooked, remove the pancake from the oven and let cool for 2 or 3 minutes.   The fluffiness may decrease and this is normal.  Transfer to a plate and cut into 4 pieces.  Garnish with freshly squeezed lemon juice, powdered sugar, whipping cream and raspberries.
